Heritage & Origins
Our premium oysters (Crassostrea gigas) are cultivated from carefully selected hatchery stock, with lineage tracing back to brood lines introduced to Ireland in the early 1970s under strict scientific oversight. Developed through collaboration with leading marine research programmes, this stock was chosen for its exceptional compatibility with Ireland’s Atlantic conditions.
Built on decades of refinement, this foundation ensures a reliable, high-integrity oyster—consistent in structure, resilient in growth, and rooted in proven Irish aquaculture.
Cultivation & Care
We grow our oysters from seed in our own nursery, allowing full control over their earliest and most critical stage of development. Once established, they are transferred to trestles along the shoreline, where they are exposed to the natural rhythm of the Atlantic tides.
Throughout their growth, the oysters are carefully tended by hand—regularly shaken and repositioned to promote even development, strong shell formation, and optimal spacing. This hands-on approach ensures each oyster is grown under precise, controlled conditions while still benefiting from its natural environment.
Harvest & Quality
When fully matured, every oyster is hand-picked directly from the trestles, ensuring only those meeting our standards are selected. They are then carefully packed on-site to preserve freshness and maintain full traceability from shoreline to shipment.
